Sauerkraut soup is one of the most common dishes in Lithuanian kitchen. In this blog post I submitted a sauerkraut soup recipe, which I commonly use when making this soup. Of course, the tastiest sauerkraut soup is when you don’t use the broth cubes from the supermarket, and instead you cook pork ribs or a piece of pork belly in the soup. At least so my mother always makes sauerkraut soup. Of course, tastier than my mom’s sauerkraut soup I hardly ever will succeed to make… Anyways, time to time I make the sauerkraut soup according to this recipe even I am the United States.
It’s not difficult to find good sauerkraut in America, you just have to visit one of the Russian supermarkets. Of course, the price is quite different than in Lithuania, but when you want to cook a dish from your country, it is not very important.
Soup’s acidity and salinity adjust by yourself, because everyone has their own taste for soups. If you have never made the sauerkraut soup, I highly recommend to try in your kitchen 🙂
P.S. Some sour cream goes so well with this soup!
{~ 6-7 servings}
Ingredients:
200 g sauerkraut
1 medium-sized onion
100 g smoked bacon
1.5 chicken broth cube
10-15 black peppercorns
3 bay leaves
2 medium-sized carrots
salt, dried dill
sunflower oil for frying
Preparation:
- Wash the sauerkraut in the strainer, if very sour.
- Boil ~1,5 – 2 l water in a big pot with the broth cubes. Then add the sauerkraut, bay leaves, peppercorns. Boil on a medium heat for about 15-20 minutes (until the sauerkraut becomes softer).
- Preheat a little oil in the frying pan and sear the chopped onion. Bake until soft, take out from the pan, set aside.
- In the same skillet preheat some more oil, put the grated carrots (grate with a bigger grater), fry them until slightly soft.
- Add the roasted carrots, onion, sliced bacon in a soup. Season the soup with salt, dried dill and boil it until the sauerkraut gets tender (about 10 more minutes). Taste whether no additional salt or sourness are needed (if you need more sourness – add lemon juice or sauerkraut liquid).
>> If the soup is too sour – add extra boiled water or a little sugar.
Raugintų kopūstų sriuba
Raugintų kopūstų sriuba tai vienas labiausiai paplitusių patiekalų visoje lietuviškoje virtuvėje. Šiame blogo įraše pateikiau tokį sriubos receptą, pagal kurį pati dažniausiai verdu šią sriubą. Žinoma, skaniausia, kai sriubai nereikia naudoti pirktinio sultinio, o vietoj jo sriuboje verdami kiaulienos šonkauliukai ar šoninės gabalėlis. Bent taip mano mama visuomet verda raugintų kopūstų sriubą. Be abejo, skanesnės nei mamos raugintų kopūstų sriubos, vargu ar man kada pavyks išsivirti… Tačiau pagal šį receptą išvirtą raugintų kopūstų sriubą labai mėgstu ir kartais jos išsiverdu ir būdama JAV.
Amerikoje nėra sudėtinga rasti gerų raugintų kopūstų, tereikia apsilankyti kurioje nors iš rusų parduotuvių. Aišku, kaina gerokai skiriasi nei Lietuvoje, bet kuomet norisi pasigaminti savo šalies patiekalą, tai nėra labai svarbu.
Sriubos rūgštumą ir sūrumą reguliuokite pagal save, nes kiekvienam pagal savą skonį. Jei niekada nesate patys gaminę raugintų kopūstų sriubos, labai rekomenduoju išbandyti savo virtuvėje 🙂

Reikės:
200 g raugintų kopūstų
1 vidutinio dydžio svogūnas
100 g karšto arba šalto rūkymo šoninės
1,5 vištienos sultinio kubelio
10-15 juodųjų pipirų žirnelių
3 lauro lapeliai
2 didesnės morkos
druskos, džiovintų krapų
saulėgrąžų aliejaus kepimui
Gaminimas:
- Raugintus kopūstus nuplauname koštuvyje, jei labai rūgštūs.
- Puode užverdame ~ 1,5-2 l vandens su sultinio kubeliais. Sudedame raugintus kopūstus, lauro lapelius, pipirų žirnelius. Verdame ant vidutinės ugnies apie 15-20 min (kol kopūstas šiek tiek suminkštėja).
- Keptuvėje įkaitiname šiek tiek aliejaus, apkepiname susmulkintą svogūną. Kepti kol suminkštėja, po to išimame iš keptuvės ir atidedame į šalį.
- Toje pačioje keptuvėje įkaitinti papildomai aliejaus, sudėti stambiai sutarkuotas morkas, apkepinti, kol šiek tiek suminkštės.
- Į kopūstus sudėti kepintas morkas, svogūną, supjaustytą šoninę, pagardinti druska, džiovintais krapais ir virti, kol kopūstas suminkštėja (dar apie 10 min). Paragaukite ar nereikia papildomai druskos ar rūgšties (jei reikia rūgšties – įlašinkite citrinos sulčių arba raugintų kopūstų skysčio).
>> Jei sriuba per rūgšti – įpilkite papildomai virinto vandens arba šiek tiek cukraus.

oh, then definitely try it!!! It’s really tasty 🙂 Just make sure that the sauerkraut would be sour and salty, not sour and sweet, because in USA supermarkets they sell those really sweet sauerkraut jars. 🙂

It’s a glorious recipe, this one! And it’s also good with sausages in it, especially smoked. We also use the sauerkraut brine to flavor even more the soup. Lovely!
