Farmer Cheese Pancakes with Apple / Varškėčiai su obuoliu

I really like pancakes with apple. During fall season, these are one of my favorite pancakes, but equally the same I love farmer cheese pancakes (varškėčiai), so farmer cheese pancakes + apple = the ideal version of farmer cheese pancakes 🙂 When you add apple to the farmer cheese dough, they become much softer and more delicious. Just don’t add too much flour into the dough, otherwise the pancakes will be hard. Since the dough is sticky I suggest to form pancakes with wet hands.

If you like you can make your pancakes into more fall like version by additionally adding ground cinnamon into the dough. You should get 18 small pancakes using my recipe.

Farmer Cheese Pancakes with Apple / Varškėčiai su obuoliu

{18 pancakes}

Ingredients:

350 g (12 oz) farmer cheese (9% fat)

150 g (1 ¼ cup) all purpose flour

1 big apple (sweet)

2 eggs

3 tbsp. sugar

3 tbsp. plain yogurt

1 tsp. baking powder

1 tsp. vanilla sugar or vanilla extract

¼ tsp. salt

oil (for frying)

Preparation:

  1. Put farmer cheese in one bowl, add eggs and sugar, mix well using a fork. Peel and grate apple (using a grater with medium holes), add to cheese mixture. Stir in yogurt.
  2. In another bowl mix flour together with baking powder, vanilla sugar (or vanilla extract) and salt.
  3. Combine flour and farmer cheese mixtures.
  4. Preheat a skillet over a medium heat with a little bit of oil.
  5. Wet your hands and form thicker (~1 cm (~1/2 inch) in thickness) small, round pancakes. Place in a skillet and fry on both sides until pancakes risen and become nice brown in color. Serve with sour cream, jam or berries. Enjoy!!!

Varškėčiai su obuoliu

Labai mėgstu blynus su obuoliu. Rudens sezonu tai mano vieni mėgstamiausių blynų, bet lygiai taip pat dievinu ir varškėčius, tad varškėčiai + obuoliai = idealus varškėčių variantas 🙂 Įtarkavus obuolių į varškėčių masę, šie tampa žymiai puresni ir skanesni. Tik nepadauginkite miltų tešloje, kitaip blyneliai iškeps kieti. Varškėčius reikėtų formuoti šlapiomis rankomis, nes tešla gaunasi lipni.

Jeigu norite labiau rudeniškų varkėčių versijos, galite papildomai įdėti cinamono. Iš šios porcijos gausite 18 nedidelių varškėčių.

Reikės:

350 g varškės (9 % riebumo)

150 g miltų

1 didelio obuolio (saldaus)

2 kiaušinių

3 valg. š. cukraus

3 valg. š. natūralaus jogurto

1 arb. š. kepimo miltelių

1 arb. š. vanilinio cukraus

¼ arb. š. druskos

aliejaus kepimui

Gaminimas:

  1. Į vieną dubenį sudedame varškę, įmušame kiaušinius, suberiame cukrų ir gerai ištriname šakute. Į tą patį dubenį sudedame nuluptą ir stambiai sutarkuotą obuolį, jogurtą ir išmaišome.
  2. Kitame inde sumaišome miltus su kepimo milteliais, vaniliniu cukrumi ir druska.
  3. Miltus sumaišome su varškės mase.
  4. Keptuvėje įkaitiname šiek tiek aliejaus ant vidutinės ugnies.
  5. Drėgnomis rankomis formuojame storesnius (~1 cm storio), nedidelius, apvalius blynelius. Dedame į keptuvę, kepame iš abiejų pusių, kol šie išsipučia ir gražiai paruduoja. Patiekiame su grietine, uogiene ar uogomis. Skanumėlis!!!

    I love the look of these pancakes. Great photo. Looking at the recipe, they don’t seem too sweet to me.

    I have a couple of questions. I usually cook with what I have on hand. My husband and I have mostly been living off the land for about 15 years. My neighbor brought me some pears from his tree, could I use them instead of the apple?

    Also, I have goats and I use the milk to make my own farmer’s cheese. I am not familiar with Lithuanian food. Could my homemade farmer’s cheese work in this recipe? I use milk from South African Boer goats, it has 10% milk fat.

    Let me know. I would like to try this recipe with the ingredients I have on hand.

    By the way, I decided to follow your blog because I can learn about Lithuanian culture and food from you.

And yes, you could definitely use pears, just make sure they are not too soft, otherwise the batter will become liquid. Goat farmer’s cheese!? That sounds absolutely delicious!! I never tried it, but I love cow farmer’s cheese, and goat milk is even richer, so it should taste so good. Try it with a goat farmer’s cheese, I bet it should taste great 🙂
