There is a big diversity of borsch recipes – Ukrainian, Russian, Polish, etc. It could be even said that each Eastern European country has one or more specific ingredients in the borsch recipe, which makes borsch their country soup. In my own kitchen, I usually make borsch with sauerkraut and little pieces of meat, and all the rest ingredients belong to the traditional borsch recipe. Of course, the most delicious borsch soup is with dried mushrooms, but to make borsch with dried mushrooms, first you need to find where to buy them, and such a mission in the United States is a real challenge. Anyway, even without dried mushrooms, the borsch is a super tasty and healthy soup. Enjoy it! 🙂
Ingredients:
1,5 l water
3 marinated bigger beets
2 medium-size carrots
1 large potato
1 onion
3 small smoked sausages
50 g bacon
0,5 arb. small peppercorns
100 g sauerkraut
3 bay leaves
1,5 chicken/pork bouillon cube
lemon juice (if needed)
salt
oil for frying
Preparation:
- Pour water into a large pot, peel and dice carrots and potato, put into the pot and bring to the boil. Cook the soup on a medium heat until the vegetables slightly soften (~10 min).
- After add peeled, chopped beets, sauerkraut, sliced bacon, bay leaves, peppercorns, bouillon cubes. Boil the soup for ~10-15 minutes.
- Preheat some oil in the pan, dice onion and slice the sausages, put them into the pan. Bake until the onion is yellow, and the sausages get a nice brown color. Then add to the soup.
- Salt the soup to taste the salt, if you want more sourness – add some lemon juice or sauerkraut liquid to taste. Boil the soup for a few more minutes. Enjoy your meal!
>> The best way to serve the soup is with some sour cream and black bread.
>> If the sauerkraut is very acidic, then wash it in a strainer with cold water.

1,5 l vandens
3 marinuotų didesnių burokėlių
2 vidutinio dydžio morkos
1 didelė bulvė
1 svogūnas
3 mažos rūkytos dešrelės
50 g rūkytos šoninės
0,5 arb. š. mažų juodųjų pipirų žirnelių
100 g raugintų kopūstų
3 lauro lapeliai
1,5 kubelio vištienos/kiaulienos sultinio
citrinos sulčių (jei reikia)
druskos
aliejaus kepimui
Gaminimas:
- Vandenį supilame į didelį puodą, suberiame nuluptas ir kubeliais pjaustytas morkas, bulvę ir užverdame. Verdame ant vidutinės ugnies tol, kol bulvės su morkom truputį suminkštėja (~10 min).
- Po to sudedame nuluptus, sutarkuotus burokėlius, raugintus kopūstus, supjaustytą šoninę, lauro lapelius, pipirus, sutrupiname vištienos kubelius. Viską verdame ~10-15 min.
- Keptuvėje įkaitiname aliejų, apkepame susmulkintus svogūnus su griežinėliais supjaustytomis dešrelėmis. Kepame, kol svogūnai pageltonuoja, o dešrelės gražiai apskrunda. Tada sudedame į barščius.
- Sriubą pagal skonį pagardiname druska, jei norisi rūgštesnės sriubos – pagal skonį įspaudžiame citrinos sulčių arba įpilame raugintų kopūstų skysčio. Sriubą paverdame dar kelias minutes. Skanaus!
>> Sriubą skaniausia patiekti su trupučiu grietinės ir juoda duona.
>> Jei rauginti kopūstai labai rūgštūs, tuomet sudėkite juos į sietelį ir nuplaukite po šaltu vandeniu.

In Lithuania we call it black bread, but it’s actually rye bread. You can find black or sand color 🙂 They both go amazingly well with borsch 🙂

Borš is one of my favourite soup. At you know, if I am thinking about Lithuanian food, my first top of mind is cold beet- soup 🙂 But this is probably little bit different ?

Yep! Cold beet soup is always extremely popular in Lithuania during the summer time 🙂 It’s made of kefyr, marinated beets, cucumber, boiled eggs, lots of fresh dill and green onions and no boilind of course. Oh, now I’ll have to make that one too, since I just remembered how great it tastes! 😀
